One of my favorite ways to preserve fruit is by drying it, and strawberries are one of the easiest (and tastiest) to start with. Drying them concentrates their natural sweetness, turning them into little bites of fruity goodness that last far beyond strawberry season.
For this batch, I used fresh strawberries from the market, but homegrown berries are just as perfect if you have them in your garden. With just a little prep, you can have jars of dried strawberry slices ready to enjoy all year long.


Follow this step-by-step guide to create your own batch of dehydrated slices and enjoy citrus flavor whenever you need it!
Preparing the Strawberries
- Wash the berries well and pat dry.
- Hull the tops to remove the green stems.
- Slice into even 1/8 to 1/4 inch thick slices so they dry consistently.


Dehydrating Strawberries
Lay the slices out in a single layer on your dehydrator trays, leaving space between them. Set your dehydrator to 135°F (57°C) and let them dry until they are leathery or crisp, usually 6 to10 hours depending on thickness and juiciness.
Once cooled, transfer the finished slices into airtight jars or containers. They’ll last up to a year when stored in a cool, dry spot.



How to Use Dried Strawberry Slices
Dried strawberries are wonderfully versatile:
- Enjoy as a snack straight from the jar.
- Mix into granola, oatmeal, or yogurt.
- Add to baked goods like muffins or breads.
- Blend into smoothies.
- Grind into powder for frosting, pancake batter, or natural coloring.
- Rehydrate for sauces or homemade jam.
