Preheat oven to 400°F (200°C).

Wash and slice tomatoes, sweet peppers, and onion in half (or quarters if large). Place them cut side up on a baking sheet. Place peeled garlic cloves around the tomatoes.

Drizzle olive oil evenly over everything, then sprinkle with salt and pepper to taste.

Roast for 25-35 minutes, until vegetables are softened, slightly caramelized, and edges begin to brown.

Remove the vegetables from the oven and allow to cool.

Transfer roasted vegetables to a food processor. Add the basil and optionally add sugar to the food processor. Blend until smooth to your desired consistency. Taste and adjust seasoning as needed.
