In a saucepan, combine the mangoes, habaneros, garlic, vinegar, water, lime juice, salt, and optionally add the sugar or honey.Â

Simmer the ingredients over medium heat for 8-10 minutes until mangoes and peppers are soft.

Let cool slightly, then transfer all ingredients to a food processor or blender. Blend until smooth.Â

Pour the sauce into a clean jar. Let cool completely, then store in the refrigerator until ready to enjoy.
 
Note
I highly recommend wearing gloves when handling habanero peppers, as their natural oils can cause skin irritation.
